Spicy Brussel Sprouts

When I was a kid I remember Brussel Sprouts as just a Christmas thing but recently I’ve noticed that they are in the shops most of the year around. This could be because I am hanging around in the higher latitudes where normal summer vegetables don’t grow!

Anyway they’re out there and I love them but Neil is not so keen. On a scale of 1-10 he rates Brussel Sprouts at about 2 but above ocra! So I needed to find a way of making my lovely sprouts more interesting. I thought sautéing (is that a word?) them with garlic and chilli might help . . .

Spicy Brussel Sprouts

Ingredients

  • 20 brussel sprouts, quartered
  • 1 dollop Olive oil
  • 2 knobs butter
  • 2 cloves garlic, crushed
  • ½ tspn chilli flakes
  • 2 tbspn mirin
  • 3 tbspn water
  • salt and pepper to taste
  • ¼ cup sliced almonds

Method

  1. Fry the almonds in one knob of butter until golden and set aside
  2. Warm the olive oil and second knob of butter and sauté the brussel sprouts until slightly browned
  3. Add the garlic and chilli and fry for another minute
  4. Then add the mirin and water, salt and pepper, cover and braise until sprouts are tender
  5. Transfer to a serving plate and sprinkle almonds over the top
